How to Eat More Green

We all want to eat more green vegetables, but sometimes may not know different ways to incorporate them into our day to day eating routine. Elizabeth Street Blog posted 4 easy steps to eating more green vegetables every day. 



Tip #1 Go green for breakfast. Start the day by drinking a big glass of green juice or a nourishing green smoothie. Want something more hearty? Add shredded spinach to an omelet or chopped kale alongside half an avocado and a poached egg.

Tip #2 Snack smart. Don't leave home without throwing a few ziploc bags of cut-up veggies in your purse to snack on later in the day. Don't have time in the morning, prepare before you head to bed the night before.

Tip #3 Set aside ten minutes to wash, chop, and bag all your produce. When you come home exhausted all you have to do is throw your prepped veggies and greens into a bowl for salad, in a saute pan to stir-fry or a shallow dish for roasted vegetables.

Tip #4 Freeze any fresh vegetables that you haven't had a chance to use in small individual freezer bags, that way you always have the perfect portions of veggies to add to smoothies, soups, and stews.
